Hollywood Studios is the fastest changing park at Disney World. With the recent opening of Toy Story Land, and next year's opening of Star Wars: Galaxy's Edge (I CANNOT WAIT!) there is so much to do and see that this park.
Here is a comprehensive list of attractions. I have included location, height requirements, fastpass+ eligability, and some thoughts on each ride, so that you can plan your trip based on what's best for your family.

Alien Swirling Saucers
Similar to Tea Cups (Or even more similar to Mater's Junkyard Jamboree if you've been to Disneyland) this will spin and swirl you with the Toy Story Alien's through space. Be careful if you get motion sickness
This is a super fun 3D show that is also interactive. This is fun for both kids and adults. It's in an indoor theater, so it's also a great way to cool off during the day.
Rock 'N' Roller Coaster Starring Aerosmith
This is a wild roller coaster with the fastest take off of any roller coaster. It is an indoor ride that features Aerosmith music. The backstory is that you are late for the concert, and your ride (the coaster looks like a car) is flying to get you there in time.
Slinky Dog Dash
This is a super fun family friendly coaster. You are riding in Slinky Dog from the Toy Story movies. The dips and turns are fun, but not intense. So if you or your kids liked some of the other smaller coasters (Seven Dwarfs Mine Train) you'll love this one.
Star Tours: The Adventures Continue
This ride is a motion simulator that changes every time you ride it. One guest is chosen as the rebel spy and their picture is shown on the screen (last time I went on it, it was me!). You'll see different lands and characters depending on your ride, so this is never boring. However, if you get motion sickness you might want to prepare yourself
Star Wars: Path of the Jedi
This is a brief film retelling the Star Wars films, and gives you a look at the future of the Star Wars galaxy. This can be a fun way to reacquaint yourself (or introduce your kids) to the Star Wars characters.
Toy Story Mania
This is a silly, fun ride that takes you on a 3D ride while playing carnival type games. It's a ton of fun for everyone.
The Twilight Zone Tower of Terror
This is probably my favorite ride in all of Disney World. You walk through a creepy hotel where you hear the backstory of passengers who were struck by lightening while on an elevator. You board the elevator, which moves through the building before taking you up and then plunging down. Over and over again. The sequence is random, and you go up with as much force as you drop.
Star Wars Launch Bay
This is an area with Stat Wars characters BB8, Chewbaca, and Kylo Ren. You might also find yourself getting hassled by the Stormtroopers (which is one of my favorite things EVER). You will also find tons of cool Star Wars memorabilia here.
Disney Junior Dance Party
This is a fun and interactive show staring your kids favorite Disney Junior characters.
Walt Disney Presents
This is a really cool space where you can find memorabilia from Walt Disney's life, including his Oscar. You can also find concept art for some of the rides. This space will sometimes be used for character meets.
Voyage of the Little Mermaid
This is a short show that has live actors, puppets, and movie clips
Indiana Jones Stunt Spectacular
This is an action packed live action stunt show featuring Indiana Jones. It is in an outdoor theater. While the theater is covered, bad weather can disrupt this show.
For the First Time in Forever: A Frozen Sing Along
A fun and funny show that lasts about 30 minutes. You'll learn the story of Frozen and sing along to all of the songs from the movie
Beauty and the Beast: Live on Stage
